Occupational Risk Assessment in School Food Services: Instruments’ Construction and Internal Validation

Occupational risk assessment in school food services (SFS) should include factors related to occupational hygiene, physical–functional planning, worker health, and good meal production practices. This study aimed develop an instrument assess perform content validation semantic evaluation. The research included three steps: (i) instrument’s development; (ii) (Delphi); (iii) evaluation (focus group). After extensive literature review, four instruments were developed. Delphi was validated by the Content Validity Coefficient (CVC), with agreement greater than 90%. analysis performed through meetings using a focus group. evaluation, there final instruments: Identification of Socioeconomic Demographic Conditions Food Handlers Geographical Mapping SFS (30 items); Knowledge Attitudes Hygiene Assessment (33 Perception Risks (16 (97 items). Instrument’s contributed constructing validating forms for analyzing risks adjusting respondents’ language sociocultural components.
